Lucy’s April 2026 Cheese of the Month: Cuthman

 

Every market there is a cheese that stops me in my tracks. ‘Cuthman’ (named after a local Saint from Steyning, where it is made) did exactly that at the March market.

Matt  Gue is a vet, Matt is a farmer and now Matt is a cheesemaker. Matt is also really part of the Cheesewick family as we have been lucky enough to share in his cheese making journey offering him one of our Chiswick Cheese Makers Grants in 2025. To see this cheese perfected to such an extraordinarily high standard gives me a very broad smile. Matt returned to the family farm after practicing as a vet for 6 years and after a chance meeting with Johnny Crickmore of Fen Farm Dairy (Baron Bigod) was inspired to use their own milk to make a cheese that would link their land, their herd and the irlocal community. Loving the pairing of Chaource cheese and Champagne Matt wanted to create a triple cream cheese that would pair beautifully with locally made sparkling wine, and I can say he has done that in spades. This cheese is a triumph!

This cheese is creamy, in both texture and taste, but more interestingly it is buttery, with grassy notes showing off the impeccable care with which the herd is reared and the pasture kept. For me, it has a subtle taste of honey at the end – there is no honey in this cheese, it’s simply the gorgeous sweetness that tricks my brain that there must be honey in there somewhere!. Congratulations Matt on winning a Silver Medal at the British and Irish Cheese Awards – what a feat in your first full year as a cheesemaker!

I did indeed enjoy it with a fizz – a Crémant de Bourgogne to be precise which had nutty overtones and paired with this delightful little cheese perfectly. It is fantastic with fresh apples or pears, or on any cheeseboard but I also dolloped it over some roast vegetables to make quite the midweek gourmet feast. This cheese is a stand-alone joy but pairs with many foods and with summer coming up is perfect with salads and pasta dishes.
