True ‘Cheesewick’ Cheese
As you know the market is run by volunteers. All our profits are given away to good causes and shared between local charities and sponsoring the young British Artisan Cheese industry.
The team has been studying cheese knowhow for a few years now and this year, for the first time, we are entering one of the competitions – The ‘Affineur of the Year’ (cheese maturing).
We are taking charge of a 2-week-old Blue Shropshire cheese from @cropwellbishop. Along with many other entrants we have 12 weeks to look after and age it successfully or uniquely.
In that time, we must pierce it to allow the blue moulds to grow, turn it to make sure the moisture levels are even and watch temperatures and humidity levels daily. It will be aged in a cellar, in Chiswick, next to the Thames.
This will be a true ‘Cheesewick’ cheese. Much, much more news on this as it happens in real time once we have received our beautiful cheese – watch this space!
